Sometimes, ok most of the time, you just want a warm fudge-filled brownie to end your day. The good news is, that brownie can be made in 5 minutes or less and it’s filled with healthful ingredients.
This brownie mug cake is full of healthy fats, complex carbohydrates, and amazing trace minerals like magnesium! Whoever said chocolate was bad, was wrong. First, no one food is “bad” or “good.” Food doesn’t have moral value. Second, cocoa powder (an ingredient in this recipe) is rich in polyphenols, flavonoid, magnesium, and other powerful antioxidants/ minerals. In fact, cocoa powder has been associated with improved mental health, increased blood flow to the brain and body, as well as improved skin health!

Ingredient Notes



Oat/ Oat Flour: Oats are loaded with vitamins, minerals, and antioxidants. Namely, manganese, phosphorus, magnesium, and copper. Did you also know that oats contain protein? Yes, that is right a 1/2 cup of dry oats contains about 13 grams of protein. Insert your mind blown emoji here! Oats also contain an anti-inflammatory and anti-inch antioxidant called avenanthramides. That’s why you might see this ingredient in skin care products.
Cocoa Powder: Cocoa powder, as already highlighted above, has many health benefits. When purchasing cocoa powder make sure it is unsweetened, fair trade, and organic (if you can).
Maple Syrup: When it comes to sweeteners, Canada got it right (in my opinion). Not only is this ingredient essential for pancakes and waffles, it also can be used as a replacement for sugar in sweet recipes! If you don’t have any maple syrup on hand, however, you can replace this ingredient with honey or agave nectar. Fun fact: Maple syrup contains a unique polyphenol called quebecol which was actually named after Quebec.
Coconut Oil: Ok, ok, I know this is a trendy oil nowadays but hear me out! This ingredient provides a buttery feel to the brownie and I personally just don’t like the taste of butter (most of the time). Call me crazy! Hence, this replacement. If you like butter, feel free to use that instead!
Almond Milk: Feel free to replace this was another plant-based milk alternative.
Cinnamon, Salt, & Vanilla Extract: These ingredient help to bring out the sweet flavor of the others.
Dark Chocolate Chips: An essential ingredient for a brownie recipe, the more chocolate the better! I suggest purchasing dark chocolate because of it’s antioxidant-rich properties. Dark chocolate tends to contain two to three times the amount of flavonoid antioxidant compounds when compared to milk chocolate. However, if you’re not a fan of bitter, dark chocolate feel free to purchase what you enjoy most!
The Step-by-Step Process



- Step 1 – Place all ingredients in a mug.
- Step 2 – Stir ingredients thoroughly.
- Step 3 – Place mug into the microwave and heat for about 1 minute.
- Step 4 – Top with extra chocolate chips and enjoy!

Notes and Expert Tips
- When making this recipe, I suggest microwaving for 30-40 seconds, stopping to stir and then add in a few additional chocolate chips to the middle and microwave again!
- Wait for the product to cool before consuming.
